Perfectly Grilled Zucchini with Garlic

This perfectly grilled zucchini are probably one of the most loved summer dishes in my house! I can eat it as a standalone dish—no meat, no proteins on the side—just give me the zucchini.

What you need to make the grilled zucchini with garlic

  • 2-3 medium-sized zucchini – Wash and dry them well, then slice them into long, thin slices, keeping the skin on. The skin intensifies the flavor and gives that amazing green color to the final product. Plus, it’s packed with fiber, so we definitely want it on.

  • Parsley – To sprinkle on top and serve. It adds a fresh touch and keeps you looking and feeling healthy. Wash, dry and chop finely.

  • Prepare the Zucchini: Slice the zucchini into thin strips. Line them in a dish and sprinkle a bit of oil to coat them so they don’t stick on the grill. Grab a pair of tongs and head to the hot grill.

  • Make the Dressing: While the zucchini is grilling, prepare the dressing. You will need some extra virgin olive oil, mustard, balsamic vinegar, honey, garlic, salt and black pepper.
