300 grams unsalted crackers (Premium Plus crackers)
2 packages (300 grams) vanilla Jell-O pudding
3 cups milk
2 cups whipping cream
1 can (about 2 cups) mixed berries pie filling
1 tablespoon Kahlúa or Baileys (optional)

Roasted eggplant makes all the difference. Roasting it softens the flesh, removes any bitter taste, and brings out a lightly smoky, rich flavour you just can’t get any other way. Plus, roasting is easy. All you need to do is pop it in the oven, and peel the skin off once it cooled down. Pop it in the blender to blend into a smooth paste.
