Apples – I love using red Gala apples since they are sweet and readily available in winter. All you need is to wash well and slice them in wedges.
Cinnamon sticks – Whole cinnamon sticks work best here, slowly infusing the tea with warmth and sweetness.
Crushed cardamom pods – Few crushed cardamom seeds add such a wonderful sweet spice that makes all the difference for this tea to stand out.
Star anise – The anise brings a fun, slightly liquorice flavour that pairs perfectly with the apple and cinnamon.

Black tea – Loose-leaf or tea bag, it is really your call. I like loose tea as it usually has higher quality, but a bag is easier to clean up.
Pinch of black pepper – Adds a tiny spicy kick.
Maple syrup – Instead of sugar or honey, I use maple syrup for its natural sweetness. If you like using honey, reduce the quantity as honey is much sweeter.

Ingredients
1 tablespoon loose black tea (2 black tea bags)
1 Gala apple, spiced
3-4 cardamom pods (crushed)
1 anise star
2-3 cinnamon sticks
1 tablespoon maple syrup
Pinch of black pepper
2 cups water
Directions
- Gently crush the cardamom pods to unlock their flavour. You can do this easily with a pestle and mortar or by pressing them with the back of a spoon on a flat surface.
- Wash and slice the apples in wedges.
- In a small saucepan, pour the water and add all ingredients except the maple syrup. Let everything simmer over low-medium heat for 30-40 minutes, or until the liquid reduces by half.
- Now add and stir in the maple syrup, cover, and let it rest for a few minutes, heat off.
- Strain into a cup, and if you are feeling fancy, add a cinnamon stick for stirring. And that’s it!
Notes
- You can substitute the star anise with few cloves, however I like the liquorice taste of the star anise, so I opt-in for that one instead.
