Ingredients
1 medium cauliflower
½ small onion, finely chopped
2–3 tablespoons butter (or herb butter)
1–2 garlic cloves, minced
Salt and black pepper, to taste
Optional: chopped chives or dill
Directions
- Wash and dry the cauliflower, then cut into smaller florets.
- Pulse in a food processor until rice-like pieces texture. Do not over-blend, because you need a nice rice-like texture, not a paste.
- Heat some butter in a pan, add onion, and sauté until translucent, for about 5 minutes.
- Stir in the minced garlic and mix well.
- Add the cauliflower rice and cook on medium heat until tender and the liquid evaporates. It should not take more than 5–10 minutes.
- Season with salt, pepper, and fresh herbs (optional but highly recommended).
Notes
- Don't over cook the cauliflower rice, as it will get too dry. All you need is for the excess liquid released to evaporate and cook nicely with the butter.
