Cake flour – This is just a mix of all-purpose flour and cornstarch, and it’s the secret to get the fluffiest pancakes. Make sure you follow the ratio below to get the perfect results.

Baking powder and salt – The powerful duo for perfect fluffy pancakes.

Cinnamon – What’s apple without cinnamon, honestly? That’s it! No more explanation needed, right?

Nutmeg – Just a pinch of grated nutmeg will balance everything so perfectly.

Egg – Make sure the egg is at room temperature so everything mixes smoothly.

Buttermilk – The key to soft, fluffy pancakes with a perfect moist texture.

Maple syrup – I usually try to replace white sugar with substitutes on a healthier and natural side. So again, I use maple syrup as the main sweetener here.

Butter – Some melted butter is welcomed to get that amazing flavour.

Lemon zest – A little fresh lemon zest brightens the flavour up so beautifully. You won’t regret the extra freshness added to the mix.

Apples – Chunks in the batter? Oh yes, please! That is what makes these pancakes extra special. You will also need apples to make the caramelized topping (which I highly recommend).

Equipment

Whisk – All those goodies need to be perfectly whisked. So a good whisk is absolutely a must.

Mixing bowls – For keeping everything organized and easy to mix, grab those mixing bowls.

Non-stick pan – To cook golden pancakes without any burns, grab a  good non-stick pan. And start flipping.

Make these easy heavenly pancakes with cinnamon and apples for a super yummy breakfast that everyone will love.

Ingredients

  • 1 cup all-purpose flour

  • 1 tablespoon cornstarch

  • 1 teaspoon baking soda

  • ½ teaspoon ground cinnamon

  • pinch of fresh nutmeg

  • pinch of salt

  • 1 egg

  • 1 cup buttermilk

  • 1 tablespoon maple syrup

  • 4 tablespoons butter

  • lemon zest

  • 1-2 apples, finely chopped (plus extra for caramelizing apples)

Directions

  • Prepare the batter
  • In a large bowl, whisk together the flour, cornstarch, baking soda, cinnamon, nutmeg, and salt. I also recommend sifting the ingredients as it helps avoid lumps and makes your pancakes extra light.
    mix dry ingredients
  • In a separate bowl, whisk together the buttermilk, lemon zest, and maple syrup.
mix buttermilk, maple syrup and lemon zest
  • Whisk the egg and add it to the buttermilk mixture.
add whisked eggs to the buttermilk
  • Melt the butter and pour it into the batter, stir well to incorporate.
    add melted butter
  • Pour the wet ingredients into the dry mix and gently stir until everything is nicely combined. Let the batter rest for 5-10 minutes, just enough time to caramelize the apples.
add wet ingredients to dry mix
  • Chop the apples to small pieces, add half of them into the batter and retain the other half for caramelizing.
    add apples
  • Caramelize the apples
  • For step-by-step instructions on how to caramelize the apples, make sure you check my caramelized apples recipe. I love them so much, I could literally eat them straight from the pan.
  • Cook the pancakes
  • Heat a non-stick pan over medium heat and melt a little butter or coconut oil. Scoop some batter into the pan and let it cook until bubbles form on top.
    start cooking the pancakes
  • Flip the pancakes with a spatula and cook the other side until golden brown. Lightly press the middle with the spatula to make sure it is fully cooked on the inside.
    flip the pancakes over
  • Transfer the pancakes to a plate and add a bit of butter on top to melt graciously.
    add butter
  • Add a scoop of caramelized apples (make sure you add all those flavourful caramelized sauce as well). Dust some cinnamon, grab a fork and dig in.
    eat with fork

Notes

  • You can absolutely substitute the apples, for pears, chucks of pineapple or blueberries, but this is the true original apple-cinnamon flavour. Try it first, and then work with substitutes to check what's your favourite variation.

How To Store The Pancakes

Ideally eat them fresh as they are perfect when warm and topped up with caramelized apples. But if you have some leftovers to deal with, simply cover with a foil or wax paper and eat them for a day.
