Ingredients
1 cup all-purpose flour
1 tablespoon cornstarch
1 teaspoon baking soda
½ teaspoon ground cinnamon
pinch of fresh nutmeg
pinch of salt
1 egg
1 cup buttermilk
1 tablespoon maple syrup
4 tablespoons butter
lemon zest
1-2 apples, finely chopped (plus extra for caramelizing apples)
Directions
- Prepare the batter
- In a large bowl, whisk together the flour, cornstarch, baking soda, cinnamon, nutmeg, and salt. I also recommend sifting the ingredients as it helps avoid lumps and makes your pancakes extra light.
- In a separate bowl, whisk together the buttermilk, lemon zest, and maple syrup.
- Whisk the egg and add it to the buttermilk mixture.
- Melt the butter and pour it into the batter, stir well to incorporate.
- Pour the wet ingredients into the dry mix and gently stir until everything is nicely combined. Let the batter rest for 5-10 minutes, just enough time to caramelize the apples.

- Cook the pancakes
- Heat a non-stick pan over medium heat and melt a little butter or coconut oil. Scoop some batter into the pan and let it cook until bubbles form on top.
- Flip the pancakes with a spatula and cook the other side until golden brown. Lightly press the middle with the spatula to make sure it is fully cooked on the inside.
- Transfer the pancakes to a plate and add a bit of butter on top to melt graciously.
- Add a scoop of caramelized apples (make sure you add all those flavourful caramelized sauce as well). Dust some cinnamon, grab a fork and dig in.
Notes
- You can absolutely substitute the apples, for pears, chucks of pineapple or blueberries, but this is the true original apple-cinnamon flavour. Try it first, and then work with substitutes to check what's your favourite variation.
How To Store The Pancakes
Ideally eat them fresh as they are perfect when warm and topped up with caramelized apples. But if you have some leftovers to deal with, simply cover with a foil or wax paper and eat them for a day.
