1 pound chicken breasts – Fresh meat is always my choice, but frozen has its perks too - once defrosted, it’s super easy to cut into any shapes and sizes.
- For the Thai Marinade
2-3 cloves of grated garlic
1/8 cup finely chopped onion
1/8 cup finely chopped green onion
2 tablespoons lime juice
2 tablespoons brown sugar or maple syrup
1/8 cup Tamari or simple soy sauce
Some light olive oil (approximately 1-2 tablespoons)
- For garnish
Chopped cilandro
Directions
- For the chicken:
- Cut the chicken breasts lengthwise into 2-thin, steak-like slices. This ensures they grill and cook perfectly. If any slice ends up too thick, simply pound it thin to ensure even cooking.
- For the Thai Marinade:
- Combine all the marinade ingredients in a bowl or shaker and mix well. You want a nice blend of flavors to make your chicken absolutely delicious.
- Take a large Ziplock bag, add the chicken slices, and pour in the marinade. Now, give the bag a good massage - make sure every bit of chicken is coated in that delicious marinade.
- Pop the bag in the fridge and let it rest for at least 3-4 hours. This gives the chicken time to infuse all those amazing flavors.
- Grilling:
- Prep the Meat: Take the chicken out of the fridge about an hour before you plan to grill. This helps it come to room temperature, ensuring even cooking.
- Grill Time: Place the chicken on a preheated grill to sear. Cook it on medium-high heat for approx. 10 min until you get a nice char. Just be careful not to overcook it—nobody likes dry, chewy chicken!
- How to serve:
- Sprinkle chopped cilantro on top for a fresh and delightful finish. Serve your Thai grilled chicken with a green salad mix, green beans, or rice. I went with a salad and green beans, and for a sweet twist, I added some grilled peaches. Yum!
