What’s better for breakfast than a quick and easy cheese pie? This is our favorite breakfast to eat and make. And probably the only thing in the world that I don’t mind being wrinkled! 😊 Ready to dive into this deliciously simple recipe? Let’s get baking!
I grew up on grandma’s recipes for various pies. And while they are incredibly delicious, I’ve got to admit they take time, and that often doesn’t work with my busy schedule. So here is something that you only need 10-15 minutes to prepare. Then you can go and relax while the oven does the rest!

Phyllo Pastry Sheets: We want to make this recipe easy without compromising on taste. Fine phyllo pastry does the trick! I’ve found that the finer or thinner they are, the better the results. Keep them frozen until the day you use them, then move them to the fridge. Make sure not to open the package too early—wait until you’re ready to use them to they don’t turn too dry.
For the cream:
- Eggs: Eggs give a nice texture, flavor, and amazing color to the pie.
- Cottage cheese or white feta cheese: If you want more strong cheesy flavour, add chopped feta cheese instead. I prefer cottage cheese as it is not too salty and I love the creamy texture.
- Cooking Oil: I prefer light olive oil, but you can use any light flavored cooking oil you have, such as melted ghee, canola oil, or extra virgin olive oil.
- Yogurt: You can definitely use sour cream or kefir instead. If you do, adjust the water quantity to ensure the cream’s texture isn’t too thin.
- Sparkling Water: The bubbles and soda help in the baking process, so I highly recommend adding it. If you don’t have sparkling water, just use regular still water and add ½ teaspoon of baking soda.
Toppings – optional (but highly recommended)
- Sesame seeds: My favorite part! They make the pie look great and taste even better.
- Mozzarella: Adds a deliciously cheesy touch. And if you have picky eaters at home, you can trick them with just this cheese toping on sight.
- Butter: Adding some butter on top adds a lovely crispiness. I highly recommend herb butter (butter with minced garlic and herbs) for an extra flavor boost. I use my homemade garlicky-dill butter.
Easy Wrinkled Cheese Pie

1 package of fine phyllo pastry sheets
- For the cream
4 eggs
400 gr of cottage cheese or white feta cheese
½ cup of light olive oil
1 cup of yogurt
½ cup of sparkling water
Salt
- Toppings
½ cup of mozzarella or shredded parmesan
¼ cup sesame seeds
1/8 cup butter
Directions
- Preheat your oven to 400°F (200°C).
- Pull the phyllo pastry sheets out of the fridge and let them warm up while you prepare the cream.
- Prepare the cream
- In a large bowl, mix the eggs, salt, olive oil, and yogurt until well combined.
- Add the cottage cheese and fold it in gently using a fork. Then, add the sparkling water and mix well. Let the mixture rest for 10-15 minutes.
- Prepare the pie
- Open the pastry sheets and take one sheet at a time, dipping it in the cream. Place the wrinkled sheet on the bottom of a deeper baking dish, preferably a cast iron Dutch oven. (Honestly, I use mine for almost everything in the kitchen!)
- Continue layering the sheets until all are used. Add your toppings of choice, such as butter, sesame seeds, and shredded mozzarella.
- Bake the pie for approximately 40 minutes. Keep a close eye on it after 30 minutes to ensure it reaches the perfect bake.
- Take it out and let it rest before slicing.
- Next, slice it up, add a dollop of sour cream, and enjoy. Be ready to make this pie often because the everyone will love it!

- For a healthier and colorful touch, you can add some chopped spinach to the cheese mixture.
