Nothing is more refreshing and satisfying than a cup of iced coffee on a hot, humid day. And when you top it with creamy coconut milk… oh, what a heavenly treat.
It is no secret that I am a big coffee person. I like my coffee, and I will probably be forever a coffee fan. But let’s me tell you a story on how this transition started…
It all started on one of those sticky summer afternoons. I was craving my usual hot coffee, but the thought of drinking something steaming in that heat? Absolutely not!

I opened the fridge in search of inspiration and there it was – an extra can of coconut milk left over from the night before. I stared at it for a second and thought… why not?
I carefully scooped the thick, rich cream from the top of the can, dropped it into my iced coffee, and gave it a gentle stir. The result was smooth, tropical, and so refreshing that I knew instantly this was not going to be a one-time thing. Just like that, my coconut iced coffee obsession began.
Now, while my heart will always belong to a nice, steamy cup of hot coffee, I do love to experiment and treat myself to different variations. That is exactly how this recipe came to life. Instead of just adding plain milk, I wondered, what could make it taste more flavourful and feel like a little treat (but still keep it light on calories)? Since I love coconut and I love coffee, testing out this combination was a no-brainer. The result? A tropical iced coffee that satisfies my caffeine cravings and makes me feel like I am sipping something special on a sunny getaway.
Why You’ll Love This Coffee
First, it is cool, refreshing, and incredibly simple to make. The creamy, smooth texture of the coconut cream makes it the perfect summer treat. And here is a little bonus – since you will already have that can of coconut milk open, why not use the rest to make something savory, like my grilled marinated Thai chicken? Now that is what I call a delicious double win.
What You’ll Need
Espresso – I love my Nespresso machine (one of my favourite kitchen tools). Just brew a strong shot of espresso, as this is the flavour base that makes your latte perfect.
Canned Coconut Milk – I love the creamy texture of the canned coconut milk. It adds smoothness and extra flavour. Make sure you don’t shake it before used, to capture that perfect cream right at the top.
Ice – No ice coffee without ice cubes in the cup. Make sure you have plenty.

Ingredients
¼ cup espresso
2-3 tablespoons coconut cream, canned
1/2 cup ice cubes
Directions
- Brew espresso. I use my Nespresso machine, but any strong coffee will work just fine.
- Fill a glass with ice, then pour the hot espresso right over it.
- Scoop in 1-2 spoonfuls of coconut cream. Do not shake the can, you only want that thick cream sitting on top. If you like, froth the cream first a silkier texture before adding it in. It is your choice!
Notes
- If you like your coffee on the sweeter side, just drizzle a little maple syrup or honey right into the freshly brewed espresso before you pour it over the ice.
And that is it – a smooth, tropical-style coconut iced coffee for you to enjoy. So let’s go and brew some coffee!
