Some recipes take me straight back to my grandma’s kitchen, and this crispy cauliflower is one of them. She made it often when I was little, and I never noticed I was eating my vegetables. I was actually so genuinely excited when she made it. All I waited for were those golden crispy crumbs on top, which made the plain cauliflower taste like a treat.
I am sharing the panko cauliflower recipe, which comes together fast, and it is perfect for a busy weeknight dinner. It needs only a handful of simple ingredients, and turns a regular vegetarian dish into something special. It’s easy to make it vegan with few small swaps. Now, let me show you how to cook cauliflower, the breaded and crispy way.
Why You’ll Love This Crispy Cauliflower
I’m all about recipes that don’t ask much of me, and this one fits right in. It really takes minimal effort, and you probably have most of the ingredients already.
The crispy breadcrumbs give soft cauliflower a crunch that even picky eaters go for, which is exactly how my grandma got me to eat it. Did I mention that it is budget friendly? It is a nice way to save a few dollars while still putting something good on the table.

What You’ll Need to Make Crispy Breaded Cauliflower
Cauliflower – A medium head is plenty for a family side dish.
Butter or cooking oil – This is what turns the crumbs golden and crispy. I usually opt in for butter, and herb butter is even better for extra flavour. Light olive oil or avocado oil work great too.
Breadcrumbs – I like making my own breadcrumbs from leftover bread so nothing goes to waste. You can make them as fine as you like or keep them chunky, panko style. Store-bought works great too.
Parmesan cheese – My own little twist on grandma’s recipe, because it adds a salty, cheesy flavour that I adore. I don’t think anything can ever get wrong with some extra cheese added.
Salt and black pepper – They are the base for good seasoning.
Fresh parsley (optional) – Fresh herbs as toppings are always a great choice. So sprinkle what you have, parsley is a great choice.

Ingredients
1 medium cauliflower
1 teaspoon salt, for the cooking water
2-3 tablespoons butter or cooking oil
⅓ cup breadcrumbs or panko
1 tablespoon grated parmesan cheese
Salt and black pepper, to taste
Chopped fresh parsley, optional
How to Cook Cauliflower
- Wash the cauliflower and cut it into florets with a small knife. No need to go too small, bigger florets actually work better.

- Place the florets in a large pot, cover them with water, and add the salt.

- Bring to a boil, then lower to medium heat and simmer for 10 minutes, depending on how tender you like your cauliflower. I don't recommend cooking it too soft as it will fall apart.

- Drain the cauliflower and let it sit in the colander for few minutes so the steam dries it off.

- While it drains, melt the butter in a pan over medium-high heat.

- Once it starts to sizzle, add the breadcrumbs and stir often for 2-3 minutes, until golden and crispy.

- Season the cauliflower with salt and pepper and arrange it on a large plate.
- Spoon the crispy breadcrumbs over the top.

- Sprinkle some parmesan cheese and add chopped parsley. That’s it, ready to serve.

Notes
- Dry the cauliflower well, so the crumbs stay crunchy longer.
- Watch the breadcrumbs closely as they can burn quickly, so lower the heat if they brown too fast.
- Add the toppings right before serving. Adding the crumbs at the last minute keeps them crispy.
How to Serve Crispy Cauliflower
There are no rules here. The crispy cauliflower is great as a standalone side dish, and I often make a small batch just for me as a snack. It also goes well with roast chicken, a good steak, or really anything you’re cooking for your family.
How to Store Leftovers
This crispy cauliflower tastes best warm and fresh, so I try not to make more than we’ll eat. If you do have leftovers, keep them in an airtight container in the fridge for up to 3 days.
Warm them up in a pan with a little butter to bring back some crunch, or in the microwave for 30-60 seconds.
Crispy Cauliflower FAQ
Can I make this vegan?
Yes. Use olive or avocado oil instead of butter and skip the parmesan or use a plant-based one.
Do I have to use panko?
Not at all. Regular breadcrumbs work great. Panko just gives a little extra crunch.
Can I make it gluten-free?
Yes, just use gluten-free breadcrumbs. Everything else stays the same.
Can I use frozen cauliflower?
Yes. It cooks a little faster, so check it early, and drain it really well since frozen cauliflower holds more water.
Can I roast the cauliflower instead of boiling it?
You can. Roast the florets at 425°F for about 20-25 minutes, until golden on the edges, then add the crumbs. One less pot to wash, too.
