Let’s be honest, everyone loves fries. So why not enjoy them a little more often, without the guilt? I wanted a healthier way to make them at home, and that is exactly how these oven baked fries were born. They have everything you love about regular french fries, just with a lighter twist. Crispy, golden, and so satisfying, without the deep fryer. My husband couldn’t believe they are simple oven baked fries when he tried them. A win!
Why This Oven Baked Fries Recipe Works
These homemade baked french fries are not deep fried, and that is the biggest win here. Healthier, but still crispy where it counts. There are a couple of small steps in the method that make all the difference, helping these crispy baked potatoes cook evenly and turn out golden every time. Follow along and you will see exactly what I mean.
What Kind of Potatoes To Use
I like Yukon gold or russet potatoes for this recipe. I have tested plenty of options over the years, and these two hold up the best in the oven. You can absolutely leave the skin on if you like a more rustic look, that is actually my preference. My kids are not big fans of the skin though, so skinless works just as well. Totally your call here.

Ingredients
4-5 large Yukon gold or russet potatoes
½ teaspoon chilli powder
½ teaspoon onion powder
1-2 tablespoons corn starch
Salt and black pepper, for boiling and for seasoning
How to Make Crispy Oven Baked Fries
- Wash and peel the potatoes, cut them into long strips.
- Transfer them into a large pot filled with cold water, making sure the potatoes are fully submerged.
- Add about 1 teaspoon of salt, cover, and let them partially cook for about 20 minutes after the water reaches a boil.
- Drain and rinse with cold water.
- Pat dry with a kitchen towel.
- Preheat the oven at 400°F, then spread the potatoes onto a parchment lined baking sheet.
- Season with salt, black pepper, chilli powder, and onion powder, then shake the pan gently so everything is evenly coated.
- Sprinkle the corn starch evenly over the potatoes and gently toss to spread it all over.
- Drizzle with a little light olive oil, or melted herb butter for extra flavour.
- Bake them on 400°F oven for about 40 minutes.
- Let them rest for about 5 minutes before serving.
Notes
- You can also finish the potatoes in air frier instead in the oven. Precook and boil the potatoes as instructed, season them the same way, then transfer to the air fryer at 400°F for about 25-30 minutes. Shake the basket halfway through so they cook evenly and crisp up all over.
How to Serve Oven Baked Fries
I love eating these on their own as a snack, or serving them alongside roasted chicken or pulled pork. They are also an amazing addition to a homemade burger, and honestly work well with just about any meal you have going. Get creative, the options are wide open here.
Can You Make These in the Air Fryer
Yes, absolutely. Precook and boil the potatoes as instructed, season them the same way, then transfer to the air fryer at 400°F for about 30 minutes. Shake the basket halfway through so they cook evenly and crisp up all over. Let me know which method you prefer.
How to Store Leftover Baked Fries
I recommend eating these right away, since baked potatoes tend to firm up once they sit and do not reheat as well as fresh. Try not to make more than you need. If you do have leftovers, warm them in the air fryer for about 5 minutes at 400°F and they will crisp back up nicely.
Crispy Baked Potatoes FAQ
Can I use a different type of potato?
Yukon gold and russet work best for texture, but any starchy potato will well.
Why do I need to boil the potatoes first?
The precook softens the inside so they cook through and stay crispy on the outside in the oven.
Can I skip the corn starch?
You can, but you will lose a lot of that crispy roast potato texture, so I really do not recommend it. Alternatively you can sprinkle some flour so the effect will be similar.
