I love easy meals (not the instant bowls, let’s be clear), but the real homemade dishes that come together in minutes with barely any effort.

And now, let’s talk about one of my all-time favourite – the ramen noodles.
I could eat ramen every single day, because for me – it is one of the most satisfying meals in the world.
All you need is just few simple ingredients and in no time you’ll get a ridiculously delicious dish served on your table.

Instant ramen noodles – I love these noodles, but you won’t need the seasoning that come in the package. Today, you are making homemade and way-more-delicious sauce with fresh, healthy ingredients. No artificial colours or flavours.
Scallions – They add gentle flavour and freshness and make the dish look extra pretty. Just wash, dry, and chop them. That’s all.

Red chilli peppers – I love a little kick of heat, so red chilli peppers are my choice to accomplish that.
Garlic – Few minced cloves are an absolute must for amazing flavour.
Soy sauce – To perfectly balance the sweetness of the tomato paste, and get the right amount of saltiness.
Homemade chilli oil (optional but highly recommended) – This is one condiment I swear by! It’s flavourful, healthy, easy to make and it gives that extra heat when you need it the most. If you don’t have it, no worries – just use toasted sesame seed oil, and the flavours will still be incredible.
Tomato paste – I know this might sound a bit unusual, but trust me that the tomato paste gives the dish a unique, rich depth of flavour.

Toasted sesame seed oil – The base of the dish where all those veggies will be brought together to perfection.
Cilantro – Some chopped cilantro for freshness and finishing the dish.
Super Easy Ramen Noodles

Ingredients
2 packs of instant noodles (without the seasonings that come with the package)
3 scallions finely chopped
2-3 garlic cloves, minced
2 red chilli peppers, chopped
1 tablespoon of soy sauce
1 tablespoon tomato paste
1-2 tablespoons homemade chilli oil
Toasted sesame seeds oil, as needed
Chopped cilantro for finishing
Sesame seeds to top up and finish (optional)
Directions
- Soak the noodles according to the package instructions (about 5 minutes) in warm water. They should be soft but not fully cooked, as they will finish cooking in the sauce later on.
- Heat up your wok over medium-high heat with a drizzle of toasted sesame oil.
- Once the oil is warm, add the chopped scallions and let them sizzle.
- Toss in the chopped chilli peppers and stir-fry everything for a few seconds to release those amazing flavours.
- Add 2-3 cloves of minced garlic and stir well.
- Drizzle in some homemade chilli oil (or a bit more sesame oil if needed). You want to see a slight shimmer of oil coating the veggies to ensure the noodles soak up all the flavours.
- Stir in the soy sauce and tomato paste, mixing everything together until well combined.
- Drain the noodles and transfer them into the wok. You should hear a nice sizzle. That’s all those flavours mingling. Stir everything for about a minute until the noodles are well coated.
- Turn off the heat and serve. Transfer to a bowl, sprinkle with chopped cilantro and sesame seeds (optional), and dig in.
Notes
- You can absolutely add some tofu or shiitake mushrooms for extra texture. Today, I am keeping it simple with the basic recipe, but feel free to get creative.
- Instead of soaking the noodles in water, use vegetable broth for even more flavour. In such a case, don’t let the broth go to waste, but add a spoon or two to the wok at the end.
How to Store Ramen Noodles
Ramen noodles are best enjoyed fresh and warm, so try to make just enough for one sitting. If you have leftovers, you can save them for later in the day or the next day. But just a heads-up, the texture won’t be quite the same after reheating. The noodles tend to soak up the sauce, making them softer.
If you do reheat them, add a splash of water or broth to loosen them up before warming on the stove or in the microwave.
