 This soup is a life-saver especially when you are feeling under the weather, weak or just craving a warm comforting meal. It is incredibly easy, simple to make, and oh so flavourful.

And seriously – if you run a food blog (like I do), I think you must have a basic chicken noodle soup recipe on the menu. And this one? Oh boy, this one is my favourite! It’s warm, delicious, ridiculously simple, and rich with immune-boosting powers. Since I don’t have my mom close by – I had to test-and-try many times until I nailed her recipe to perfection.

Why Is This Soup Amazing

First, this recipe is incredibly simple to follow and easy to make. Just gather a few classic veggies, wash, chop, add water to simmer and season. That’s it! But, the most important ingredient are the chicken bones, because they bring so many nutrients and wonderful flavours to the broth. 

The chicken brings in protein to help rebuild your strength and keep you feeling full. The bones (especially if you’re using drumsticks or legs) add extra nutrients, like collagen, minerals, and immune-boosting powers. The vegetables (carrots, garlic, onions, and celery) are loaded with vitamins. And let’s not forget that steamy broth that keeps you hydrated, soothes sore throats, and helps clear stuffy sinuses. So many countless times this soup saved me from trouble. 

This soup is also perfect one-pot meal, ideal for for leftovers – you can make a batch, stash it in the fridge or freezer, and pat yourself on the back all week long.

Every time I visit my Mom, I ask for this soup – every single time. 

What you’ll need

Chicken – I recommend using any bone-in chicken. The bones are rich with minerals and collagen that enhance the flavours of the broth. But if you only have chicken breasts – no worries, just go for it.

Mix of veggies – I like using classics, like carrots, onions, garlic, celery as the base. Remember, this is my Mom’s classic recipe, it is incredibly flexible – so feel free to try a few of your favourite veggie add-ins.

Seasoning – Salt and black pepper are a must. I often use seasoned salt for extra boots of flavour.

Noodles – I use homemade egg noodles, but you can absolutely use what you have or prefer (any leftovers pasta is absolutely ok). Or simply chop a small potato and add it in with the rest of the veggies to cook.

Try my Mom’s best classic chicken noodle soup. This easy homemade recipe is simple, comforting, and made with ingredients you already have at home. 

Ingredients

  • 2-3 chicken drumsticks (or any bone-in chicken you can find)

  • 1 small onion, finely chopped

  • 3-4 garlic cloves, minced

  • 1 carrot, peeled and chopped

  • 1 celery stalk, chopped (save those leafy tops as well)

  • 1.5–2 litres hot water

  • Salt and black pepper, to taste

  • Handful of noodles – Homemade egg noodles, leftover pasta, or even a finely chopped potato.

Directions

  • In a Dutch oven, heat a drizzle of oil (I use olive or avocado). Add the chopped onion and sauté for about 2 minutes.
  • Toss in a chopped carrot, celery, and garlic. Stir and let them get golden and soft. It should take them about 5 minutes.sauté the vegetables
  • Drop in the drumsticks into the pot.add the drumsticks
  • Carefully add hot water to the pot and bring to a gentle simmer.pour hot water
  • Cover partially and simmer on low-medium for about 30-40 minutes or until the chicken is tender and falling off the bone.
  • Remove the chicken and let it cool a bit. Meanwhile, season the soup with salt, pepper, and (if you want) seasoned salt.add hot water
  • Shred the chicken meat and return it to the pot. add shredded chicken
  • Add noodles (or your carb of choice) and let it simmer for another 10 -15 minutes. Turn off the heat and let the soup settle for 10 minutes before serving.add noodles
  • To serve, splash some lemon juice or a little balsamic vinegar. I like to spice things up, so I often drizzle some Sriracha to serve.Mom's Homemade Chicken Noodle Soup

Notes

  • This recipe is perfect for preparing a classic chicken broth. Simply remove the vegetables (don't add noodles) and keep the broth in a clean jar in the fridge for up to a week. You can also freeze it for longer.

How to Store Soup Leftovers

The prepared soup you can store in the fridge for up to 5 days. To freeze, divide into portions, freeze in airtight containers or bags. Reheat on the stove or microwave.
