What You’ll Need
Here’s the simple ingredients that bring this dressing to life:
Balsamic vinegar – I love the tangy-sweet flavour of the balsamic vinegar. It adds instant flavour depth, beautiful colour and unique sweetness.
Dijon mustard – I really encourage using Dijon, because adds a little zing and helps the dressing blend beautifully. Plus those little mustard seeds make it look so stylish.
Honey – Sweetens the dressing just enough and balances everything out. Maple syrup works great too (I often used it).
Chives – Although they are optional, I love adding finely chopped chives for a fresh green sparkle.
Extra virgin olive oil – No salad dressing can be made to perfection without good extra virgin oil. Don’t be afraid to use it, generous.

Salt and black pepper – the magic combo. I like using coarse black pepper for both the flavour and rustic look.
A small mason jar – You can totally use a bowl and whisk, but a jar means less mess and easier storage. Shake it up, pop on a lid, and you are done. Transfer into the fridge.

Ingredients
⅓ cup balsamic vinegar
1 tablespoon Dijon mustard
3 tablespoons honey (or maple syrup)
1 tablespoon chopped chives, finely chopped
⅔ cup extra virgin olive oil
Salt and black pepper to taste
Directions
- In a small jar, add balsamic vinegar, Dijon mustard, honey and olive oil.
- Finely chop chives and toss them inside the jar.
- Season with salt, and pepper.
- Put on the lid and give it a good shake until everything blends into nice dark, creamy texture.
Notes
- If the vinaigrette separates a bit in the fridge (totally normal), just give it a quick shake before using.
- Make a larger batch and use it throughout the week for salads, roasted veggies, or even as a dip for crusty bread.
How to Store It
Simply store the jar in your fridge for up to 2 weeks. I often make a larger batch (2x or 3x). I I pour some into smaller containers and take it to work to season my lunch salad. It always feels like a little treat.
