Ingredients
- For the salad
1 package of green spring salad mix (300 gr)
2 apples (I used Ambrosia, but any type works)
1 tablespoon herb butter (or plain butter)
4-5 pitted dates, sliced
2-3 dried apricots (optional)
¼ cup goat cheese, crumbled
¼ cup grated parmesan cheese
½ cup toasted walnuts (or alternatively pecans or pistachios)
¼ cup pomegranate seeds
- For the dressing
2 tablespoons Balsamic vinegar
¼ cup extra virgin olive oil
1 tablespoon maple syrup (or honey)
1 teaspoon Dijon mustard
Salt and pepper to taste
Directions
- Preheat the oven to 400°F (200°C). In a meantime, chop the pitted dates and dried apricots into thin slices. Set them aside.
- Peel and slice the apples into thin wedges. Arrange them on a baking sheet and top up with some herb butter. Roast for about 20-25 minutes, until the natural sugars caramelize. Once ready, set aside to cool.
- In a small pan, add the nuts and toast them on medium heat for about 5 minutes. Shaking the pan occasionally, pay close attention as they can easily burn. Once they get gently toasted, set them aside to cool.
- To prepare the dressing, whisk together the balsamic vinegar, olive oil, maple syrup, Dijon mustard, salt, and pepper until well combined.
- Spread the salad mix in a large serving bowl of your choice and start the assembly.
