Ginger Mint Ice Cubes

Mint ice cubes, cocktail ice cubes, fruit ice cubes, ginger cubes, I have a small obsession with all of them. I love how much flavour one little cube can hold, how pretty they look sitting in a glass, and how many different drinks they can turn into something special.

Mint is one of my favourites on its own. Ginger is right up there too. But put the two together and you get ginger mint ice cubes, and that combination is the one I keep coming back to all summer long.

What You’ll Need for This Ginger Cubes

Water – Water is the base for every ice cube, of course. 

Ginger – Fresh ginger is where the warmth and spice come from. Plus it pairs so well with the mint.

Fresh mint leaves – You need fresh mint leaves, they are really the way to go here. The flavour is brighter and the leaves look prettier frozen into the cube.

Lime –  Few thin slices and a splash of fresh squeezed juice add freshness and a nice pop of colour.

Large silicone ice cube tray – The silicone makes these so easy to fill and even easier to pop out when you are ready to use them.

Ginger mint ice cubes bring cocktail ice cubes, mocktails, and fizzy drinks to life. Simple to make, ready when you need them.

Ingredients

  • 1 ½  cups water

  • 1 small knob fresh ginger (about one inch), thinly sliced

  • 10-12 fresh mint leaves

  • ½  lime, thinly sliced into rounds

  • Juice of the other ½  lime

How to Make Ginger Mint Ice Cubes

  • Rinse the mint leaves and pat them dry.herbs
  • Slice half of the lime in thin circles.circle limes
  • Grate the ginger and add it into the water. I like using a measuring cup as it makes it easier to measure and pour into the silicone molds.grated ginger
  • Squeezed the juice from the other half lime into the water. Mix well.mix the water
  • Place a mint leaf, and a piece of lime into each cavity of your silicone tray.lime and mint in a tray
  • You can strain the flavoured water to remove any tiny bits of the grated ginger or if you don’t mind you can pour directly into the molds. IMG 0484 scaled
  • Fill the tray the rest of the way with water, making sure everything is covered.fill the tray with water
  • Freeze for at least 4 hours, or overnight for best results.
  • Pop the cubes out and store them in a freezer bag or container until you are ready to use them.

How to Use Ginger Mint Ice Cubes

I usually use these as cocktail ice cubes. They work so well in a vodka or gin based drink, and the ginger and mint do a lot of the flavour work for you.

They are just as good in a mocktail. Drop one into a glass of ginger ale and you already have a good drink going. Or keep it even simpler and add a couple to plain sparkling water for a refreshing drink.

Once you get into the habit of keeping a batch in the freezer, it’s easy to branch out. The same method works for fruit ice cubes too, so berries, citrus, or cucumber slices are all worth trying next. This is an amazing way to use up herbs and leftovers fruit before they go bad. 

How to Store Them

Once they’re frozen solid, transfer the cubes into a freezer bag or an airtight container. They’ll keep well in the freezer for about a month, so it’s worth making a full batch at once. O you can simply keep them in the molds until you are ready to use them. Usually, that is what I do.

Ginger Mint Ice Cubes FAQ

Can I use dried mint instead of fresh? 

Freshmint leaves are the best here. Dried mint won’t hold up the same way or look nearly as good frozen into the cube.

Do I have to use lime? 

No, but it adds a nice bit of freshness. Lemon works well as a swap.

How long do these last in the freezer? 

About a month in a sealed bag or container, though they tend to get used up well before that.

Can I make these without a silicone tray? 

Yes, any ice cube tray works. Silicone is just easier when it comes to popping the cubes out in one piece.
