So I decided to take what I love most about pumpkin season and balance all that sweetness with a a bit of creamy ricotta. And that little twist turned these pancakes into something amazing and memorable.

Vanilla extract – For smooth warmth and most delicious flavour. I always recommend pure vanilla extract rather than vanilla sugar to pop that vanilla the right way.

For the dry mix
All-purpose flour -When it comes to flour you can use all-purpose flour, or add extra nutrients by swapping with whole wheat or oat flour. For extra fluffiness, often opt in for cake flour.
Baking powder, baking soda and a pinch of salt – This trio is the magic combo for a perfect batter. They help your pancakes cook up thick and fluffy.
Spice mix – For perfect pumpkin spice flavour, mix cinnamon, all spice, nutmeg and ground ginger.
For serving

2 eggs
½ cup canned pumpkin puree
½ cup milk
2 tablespoons ricotta cheese
2 tablespoons maple syrup
2 tablespoons vanilla extract
4-5 tablespoons coconut oil, for cooking
- Dry Ingredients
1 cup all-purpose flour
½ teaspoon baking soda
2 teaspoons baking powder
1 teaspoon cinnamon
¼ teaspoon all spice mix
¼ teaspoon ground nutmeg
¼ teaspoon ground ginger
pinch of salt
- Toppings (optional)
1 tablespoons ricotta cheese
1 tablespoon pumpkin puree
1 tablespoon of butter
sprinkle of cinnamon
How to Make the Pumpkin Ricotta Pancakes
- Add all the wet ingredients into a blender and pulse until smooth. Or you can whisk by hand, by mixing until nicely combined.
- In a mixing bowl, whisk together the flour, baking powder, baking soda, salt, and the spice mix.
- Pour the wet mix into the dry ingredients. Use a spatula to gently fold until everything is just combined.
- Let the batter sit for 5–10 minutes. This helps it relax and makes your pancakes fluffier.
- Heat a non-stick pan on medium heat. Add a tablespoon of coconut oil and scoop the batter in (about ¼ cup per pancake).
- Cook for 2–3 minutes. When bubbles form on the surface, check the bottom, it should be golden brown. Flip and cook the other side until golden.
- Once both sides have golden crust, transfer out into a plate.
- Repeat the process, you should get about 5-6 pancakes depending on the size you opt in for. Stack your pancakes, top with a pat of butter, drizzle of maple syrup, and sprinkle of cinnamon.
- If you want to go one step further, prepare a simple mix of ricotta and pumpkin puree. Add a nice dollop on top. That’s it!

I’m in love with these pancakes. They’re soft, fluffy, and almost feel like dessert, but more balanced, and not too sweet. The ricotta works so well by softening the flavour and making them light and satisfying.
They are delicious and just perfect Thanksgiving breakfast (or any day you need a little comfort on your plate).
How to Store
They’re best served fresh, right off the pan. But if you have leftovers, you can store them for up to two days and reheat in a lightly oiled pan.
You can also freeze them flat, then thaw for 30 minutes before reheating in a pan.
You can keep leftover batter in the fridge for a day, just bring it to room temperature before cooking. And that’s it!
