What you need for this recipe
Freshly baked croissants – Sure you can make croissants from scratch, but we are trying to keep things simple. Frozen croissants that need just a quick bake are perfect for busy mornings and still taste fantastic.
Fresh black figs – Black figs are naturally sweet and give a perfect balance to the tangy, savory flavor of blue cheese. Their soft and sweet texture complements the flaky croissant so perfectly. Plus, when you slice them open to reveal the pink inside, the colors and flavors create a delightful dance for your senses.
Blue cheese – As I mentioned above the blue cheese adds a bold, tangy flavor that pairs wonderfully with the sweetness of figs. Cheese and croissants are already a winning combo, but the addition of sweet figs takes it to a whole new level of deliciousness.
Salad mix – Adding some greens not only brings color, but also a touch of freshness and vitamins to your breakfast. Any salad mix you have on hand will work great. I love using a mix of baby spinach, arugula, and baby lettuce for this one.

Figs and Blue Cheese Croissants

- For the filling:
5-6 fresh black figs – washed and dried
Handful of fresh salad mix – washed and dried in salad spinner
A slice of blue cheese (about an inch thick) – keep it in the fridge until ready to use, as it softens quickly.
- For the maple balsamic dressing:
2 tablespoons extra virgin oil
1 tablespoon maple syrup
1 tablespoon balsamic vinegar
a small drizzle of mustard
pinch of salt
fresh rosemary leaves - finely chopped
Directions
- Bake the Croissants: Bake the frozen croissants according to the package instructions. I recommend baking them at a lower temperature (around 350°F) for a bit longer to ensure they rise properly and bake evenly. Once they are golden and baked, let them cool for at least 30 minutes.
- Prepare the Vinaigrette: While the croissants are cooling, mix all the dressing ingredients in a small bowl or shaker and set aside.
- Prepare the Filling: Wash and dry the salad mix. Gently drizzle a spoonful of the balsamic vinaigrette over the salad.
- Wash, dry, and thinly slice the figs. Take the blue cheese out of the fridge and slice it thinly, or crumble it if slicing is difficult.
- Assemble the Croissants: Cut the cooled croissants in half lengthwise. Open them up and start layering: add a layer of figs, a few slices or crumbles of blue cheese, and a bit of salad mix.
- Close the croissants - Beautiful! Enjoy your delicious creation!
