Fiesta Mango Salsa

I used to be one of those people who thought mango was strictly for fresh fruit snacks, smoothies, or desserts. But… I was wrong! Turns out, mango can do so much more—it’s like the secret ingredient that takes any meal to the next level! One of my favorite ways to showcase this tropical fruit is with this super easy mango salsa.

The first time I made it, I was blown away by the explosion of flavors in my mouth. I had this moment where I just paused, trying to figure out how I felt about it… and then I absolutely loved it! And here’s the best part: it is a flexible dish that works with just about anything. Need a quick snack? Done. Want to elevate your tacos? Perfect. Looking to add some zing to your booster bowls? This salsa’s got you covered.

One  tip here: The more colors, the better! Pick a rainbow of veggies to throw into this salsa, and you will end up with a dish that is not only delicious, but also a feast for the eyes. 

What mango to use

There are two main types of mangoes in general: Ataulfo (or Honey) mangoes and Tommy Atkins mangoes.

  • Ataulfo mangoes are smaller, with a smooth texture and a sweet, slightly tangy flavor. Their flesh yellow and they are perfect for eating fresh or in desserts.
  • Tommy Atkins mangoes are larger and have a firmer texture, with a deep orange-red skin. While they are mildly sweet and slightly fibrous, they hold up well in cooking, making them ideal for salsas, salads, and, of course, curries.

Both types of mango are unique in flavor and texture, making them good choice for different dishes. For this mango curry chicken dish, I recommend using the Tommy Atkins type (the larger mangoes with green and orange skin).

What do you need for this easy mango salsa 

  • Mango: The star of the show! Make sure your mango is ripe but not too soft and mushy—you want nice, firm squares that hold up in the salsa. Mango brings a natural sweetness that is just irresistible, and it is packed with vitamins A and C, which are great for your immune system. Plus, that vibrant yellow flesh is like adding a little sunshine to your dish, making it as beautiful as it is tasty.
  • Small Purple Onion: You can’t skip the onion! It is what balances out the sweetness of the mango with a subtle bite. Plus, that deep purple color adds a gorgeous contrast to the bright yellow mango, completing the rainbow of flavors and colors.
  • Bell Peppers: Go for at least two different colors of bell peppers—green, yellow, orange, or red. They bring a fantastic crunch and a fresh, crisp taste that complements the softness of the mango perfectly. Not to mention, the more colors, the more nutrients you are adding to your dish.
  • Cilantro: Freshly chopped cilantro is a must. Please do not skip it! It adds a burst of tangy freshness that really makes the mango’s flavor pop. Cilantro is also rich in antioxidants, so you’re not just making your salsa taste amazing—you’re giving your health a boost too!
  • Salt and Black Pepper: Season to taste. A little pinch of salt and black pepper bring all the flavors together, enhancing the sweetness of the mango and the freshness of the veggies.

This mango salsa is an incredible flavor fiesta, blending sweet, tangy, and zesty notes into one delicious and so simple Mexican-inspired dish

Ingredients

  • 1 cup mango - About one large Tommy Atkins mango (the greenish-orange kind). Make sure it is ripe but still firm—perfect for those juicy, sweet cubes.

  • ½ cup purple onion - Finely chopped to add that sweet, zesty bite and a pop of color.

  • ½ cup bell peppers - Mix up the colors—green, yellow, orange, red. The more colors, the better the crunch, the look and flavor!

  • ½ cup cilantro - Fresh and finely chopped, it’s the herb that ties all the flavors together.

  • Juice of ½ lime - A kicker that brightens up the whole dish.

  • Salt and black pepper - To taste, just enough to enhance the flavors.

Directions

  • Start by peeling the mango and chopping it into small cubes. These little golden pieces of fruit are the heart of your salsa.

  • Next, finely chop the purple onion. This adds a mild sweetness and a bit of crunch.

  • Clean the seeds out of your bell peppers and chop them into small pieces. Remember, variety in color means variety in flavor!

  • In a bowl, combine the mango, onion, and bell peppers. Squeeze the juice of half a lime over the mix and gently stir everything together. The lime juice will bring out the sweetness of the mango and the freshness of the peppers.

  • Finally, toss in the chopped cilantro and give it one last gentle mix. Now your salsa is ready to go!

  • This salsa is super flexible! Serve it as a snack with your favorite drink and some crunchy nacho chips on a relaxed weekend night. It is also perfect for add some fun to your healthy rice bowl (so you like them better) or adding a fresh finishing touch to tacos.
