Croissants – A day or two old croissants are the best for this recipe. They soak all the flavours so beautifully. You can absolutely use fresh croissants, I’ve done that many times.
Brie – This cheese type is great for toasted pastries, so it is the best cheesy filling for croissants. However, if brie is not your thing – use whatever cheese you have. You can opt in for a blue cheese, ricotta, or the good old cheddar.
Mushrooms – I like cremini mushrooms, for their deep flavour, but any kind will do for these mushroom stuffed croissants.
Pancetta – Thinly sliced pancetta adds great saltiness to balance all flavours. But, you can use prosciutto, pastrami, or ham too. I often use what I have.
Green salad mix – I use baby lettuce or any fresh salad mix for a crisp, green, healthy layer.
Salad Dressing – Optional, but I love a drizzle of my honey mustard vinaigrette or any balsamic-based dressing of your choice.

4 croissants
1 cup sliced cremini mushrooms
100 grams brie, sliced
100 g pancetta, thinly sliced
1 cup green salad mix
Fresh rosemary
1–2 tbsp olive oil (for cooking)
1 tbsp honey mustard vinaigrette (optional)
Directions
- Clean the mushrooms with a damp towel and slice them thinly.
- In a preheated pan, add olive oil and rosemary.
- Cook the mushrooms for about 5 minutes until caramelized. Set aside.
- Slice the brie into thin pieces.
- Cut each croissant lengthwise and start layering: start with the brie, mushrooms, and pancetta.
- Close the croissants and place them on a parchment-lined baking sheet.
- Bake at 350°F (175°C) for about 7–10 minutes, until the cheese melts and the croissants turn golden and crisp.
- In a meantime, toss the salad mix with a drizzle of honey mustard vinaigrette for some extra flavour.
- Gently open each warm croissant and add the salad mix. Close, serve, and enjoy!
