Why Is This Grilled Cheese Sandwich With Brie So Good
First, it is simple, made with just a handful of ingredients you probably have at home. Totally customizable. I keep mine vegetarian, but you can easily turn it into a full meal by adding grilled chicken or deli meat. Pair it with a salad and suddenly you have lunch or dinner. And the cleanup – minimal. One pan for the filling, one baking sheet for the oven. If you are using a cast iron pan – even better. One tool and you are done.
What You’ll Need
Wholewheat bread – I always reach for the wholewheat bread packed with seeds. It is nutritious, tasty, and full of fiber. But listen, if white bread is calling your name, go for it.
Mushrooms – Cremini are my favourite. Great flavor, great texture, and they make the sandwich feel hearty without any meat.
Sun dried tomatoes – They are tiny flavour bombs. I prefer the ones stored in oil so I can use that same oil in the pan. Nothing goes to waste and everything tastes better.
Brie cheese – Soft cheese, that easily melts, it is not too salty and it goes well with the other ingredients.
Garlic – Just because it makes everything taste better.
Rosemary – Fresh is amazing, but dried rosemary works perfectly is that is what you have.
Homemade Caesar dressing – Optional, but I love adding a drizzle here. But if you don’t have it – feel free to skip or use just a regular mayo.
Olive oil – A drizzle for frying, and making everything crispy and golden.

Ingredients
4 slices of whole wheat bread
1 cup sliced cremini mushrooms, sliced
½ cup sun dried tomatoes, sliced
50 grams brie cheese, sliced
fresh rosemary
¼ cup homemade caesar dressing
1 garlic clove, minced
Drizzle of olive oil
Salt and black pepper to taste
How to Make a Mushroom Brie Cheese Sandwich in the Oven
- Clean the mushrooms with a damp cloth and slice them.
- Warm a little olive oil in a pan.
- Add the mushrooms and rosemary and cook for 7-10 minutes over medium-high heat.

- Chop the sun dried tomatoes and add them to the pan. Add the minced garlic and cook for about 5 more minutes until everything softens and blends together.

- Season with salt and black pepper to taste. Do not overcook, you want everything to remain juicy, not dry.
- Preheat your oven to 350°F.
- Take two slices of bread and start building your sandwich.
- Add 2-3 spoonfuls of the mushroom mixture to one slice and spread evenly.

- Add thin slices of brie all over.

- Drizzle Caesar dressing over.
- Finish by topping with the second slice of bread.
- Place the sandwich on a parchment-lined baking sheet. Drizzle with olive oil (or spread with butter).
- Bake for about 10 minutes, until the crust turns golden.

- Pull it out, slice it in half and enjoy every bite.

Notes
- You can swap the olive oil with butter, if you prefer.
- You can instead grill the sandwich in a pan over medium-high heat for about 2-3 minutes each side.

My favourite combo is serving with a simple green salad. Pick your favourite mix and dressing or go with my homemade Caesar salad. It is the perfect match.
A warm tomato soup also works amazingly. Classic and delicious.
