What You Will Need to Make Oven Baked Trout
Trout – The star of this dish. You can easily find trout fillets at fish stores or your favourite supermarket. I love using clean fillets, but if you are comfortable cleaning and preparing a whole fish, you can use the same method.
Olive oil – Just a light drizzle for cooking and flavour.
Salt and black pepper – To season to taste.
Dill – You can use either dry dill or fresh, whatever you have on hand.
White wine sauce – This sauce adds amazing flavour and freshness to finish the dish. You need garlic, butter, green onion, lemon juice, and dry white wine.
Good non-stick baking sheet – This is one of the cooking essentials everyone must have. From baking cookies to grilling fish.
Easy Oven Baked Trout

Ingredients
- For the trout
1 pound trout fillets
Drizzle of olive oil
Salt and black pepper, to taste
- For the wine sauce
2–3 green onions, finely chopped
2 tablespoons butter
1 garlic clove, finely chopped
2 tablespoons dry white wine
2 tablespoons lemon juice
½ teaspoon dry dill or fresh chopped dil
Salt and black pepper, to taste
Directions
- Prepare the trout
- Preheat the oven to 385°F. Line a baking sheet with parchment paper.
- Lay the trout fillets on the sheet (skin down) and season with olive oil, salt, and black pepper.
- Transfer to the oven and bake for 15–20 minutes, depending on thickness.
- Once the fish is cooked and has that light baby-pink colour, remove it from the oven and let it rest while you prepare the sauce.
- Prepare the white wine sauce
- Melt the butter in a pan over medium heat.
- Add the chopped green onions and sauté for about 2-3 minutes.
- Add chopped garlic, dill, salt, black pepper, and lemon juice. Cook for another minute.
- Pour in the white wine, reduce the heat, and cook for 2–3 more minutes until the sauce slightly reduces.
- Drizzle the sauce over the baked trout and it is ready to serve.
Notes
- Try not to overcook the trout, it can dry out quickly, and we want it tender and juicy. It should not take more than 15-20 minutes.
- I usually serve the trout without the skin. Take a spatula and gently lift the fish. It should easily separate from the skin.
How to Serve Oven Baked Trout
I love serving trout with my favourite homemade potato salad or a simple green salad mix. And I never forget tartar sauce, because, in my opinion, the dish feels complete with it.
