What You’ll Need

Apples – Use what you have: Granny Smith, Ambrosia, Gala… anything works. Wash, peel, and cut or shred depending on the texture you like in your apple crumble pie.

Butter – Traditionally this recipe used pork lard (I know, sounds wild), but I go with unsalted butter to keep it simple and friendly for everyone. It still gives you that beautiful flakey crust.

Ingredients

  • For the crust
  • 200 grams unsalted butter, room temperature

  • ½ cup sugar

  • 3 egg yolks

  • 2 cups all purpose flour

  • 1 teaspoon baking powder

  • ½ cup shredded almonds for topping

  • pinch of salt

  • For the apple crumble pie filling
  • 3 to 4 apples

  • 1 teaspoon vanilla extract

  • 3 egg whites

  • 2 teaspoons maple syrup

  • 1 cup chopped walnuts

  • 1 teaspoon cinnamon

  • 1 tablespoon cornstarch

  • zest of one lemon

  • Pinch of salt

How to Make Apple Crumble Pie

  • Prepare the crust
  • Take the eggs and butter out at least an hour before you start. This helps everything mix smoothly and gives you that perfect soft cookie crust.
  • Beat the butter with a mixer on medium speed for 2 to 3 minutes until fluffy.beat the butter
  • Add half the sugar and mix again. Add the remaining sugar and keep mixing for another minute.add sugar to butter
  • Add the egg yolks one by one. Continue until everything is incorporated well.add egg yolks
  • In a separate bowl mix the flour, salt, and baking powder. Add the dry ingredients into the butter mixture and use a spatula to fold everything into a smooth dough.add flour
  • Split the dough in half. Wrap one half with a plastic foil and place it in the fridge.
  • Take the other half and press it evenly into the bottom of your baking pan.
  • Prepare the filling
  • Peel and chop or shred the apples. Traditional apple crumble pie uses shredded apples, but either is great. 
  • Add the maple syrup and vanilla and mix.add maple syrup
  • Sprinkle in the cinnamon and salt. add cinnamon
  • Sprinkle the cornstarch to help absorb the extra juices, so the filling doesn't get too watery.add cornstarch
  • Beat the egg whites on medium-high speed until fluffy. beat the egg whites
  • Add the lemon zest. I usually use microplane to shred the zest. add lemon zest
  • Next, add the chopped walnuts into the egg whites and fold gently with a spatula. Don't over mix as it will flatten. You need fluffy texture.add chopped walnuts
  • Assemble the pie
  • Preheat the oven to 380 F.
  • Spread the apple filling on top of the crust.spread the apple filling
  • Spread the fluffy egg white mixture over the apples.
  • Take the chilled dough from the fridge and shred it right over the top of the filling. If some pieces clump together, just break them gently with your fingers.shred the dough
  • Sprinkle the shredded almonds on the top.sprinkle shredded almons
  • Bake for 30 to 40 minutes or until the top is beautifully golden. Keep an eye on it so it doesn’t burn.baked apple pie

Notes

  • You can opt in for other toppings if you like, like toasted coconut, oats or go without toppings. It will be equally delicious.

How to Store It

Keep it covered at room temperature for a day or two. For longer storage, place slices in an airtight container in the fridge for up to five days. II don’t recommend freezing this apple crumble pie because apples release too much liquid and the texture won’t be the same.
