Let’s talk about almond croissants. I mean, who wouldn’t like such an indulgent, buttery, flaky breakfast? Plus, that almond filling brings all the flavour to the roof! And guess what? They are easier to make than you think.

And since we are all short on time,  but still craving these rich flavours, let me show you a shortcut that makes these totally doable croissants with minimal effort.

My secret is using already baked croissants, to save on effort and time. And yes, no need to make them from scratch, you can bake them the day before, grab some from the store, or if you are pastry wizard, by all means – roll that dough.

 

The secret is that the stale croissants are better. That dry, sad croissant sitting on your counter will soak up all that luscious almond filling and turn into something absolutely divine. So, let’s rescue those flaky leftovers and give them a second (very delicious) life.

What You’ll Need to Make Almond Croissants

Almond flour (almond meal) – This is where that beautiful nutty texture and amazing flavours come from. 

Flour – You need just a bit to firm up the filling and get that right texture.

Vanilla and Almond Extract – Because flavour is everything for these croissants, if you don’t have almond extract, raid your liquor stash. I use Amaretto when I have it,  but heads-up that this means it’s not kid-friendly since it has a little alcohol. For vanilla – I mean, I don’t need to say much right?

Maple Syrup – My favourite sweetener (I mean, I do live in Canada, so obviously ). But honey or white sugar work too.

Croissants – I use frozen croissants, bake them the day before, and let them sit overnight. But the already baked stale croissants work the best. 

Powdered Sugar and Sliced Almonds – Please use these toppings. Nothing gives that spectacular presentation as the powdered sugar and some sliced almonds to finish. Chef-style perfection.

Eggs and Butter – A little bit of both is needed for a rich, flavourful filling that holds everything together.

Simple Syrup or my Rosemary Cocktail Syrup – I always have this syrup stocked in my fridge. That is how I preserve all those amazing herbs leftover in the fall. I recommend you do the same as flavour will be enhanced. But if you don’t have it, simple syrup works just as well. Follow this recipe (just skip the herbs).

Try these easy almond croissant recipe with the best almond filling. A simple way to make French bakery-style croissants at home. They are perfect for breakfast or a sweet treat. 

Ingredients

  • 5-6 stale croissants

  • For the almond filling
  • ⅓ cup almond flour (almond meal)

  • 2 tablespoons flour

  • 2 tablespoons butter

  • 2 tablespoons maple syrup

  • 1 tablespoon vanilla extract

  • 1 tablespoon almond extract (or almond based liquor like Amaretto)

  • 1 egg

  • For finishing
  • ¼ cup Rosemary cocktail syrup or simple syrup

Directions

  • If you are using frozen croissants, bake them one day ahead following the package instructions. If you are using already baked croissants, grab ones that are at least a day old.
  • Preheat your oven to 350°F (175°C).
  • Start working on the filling, by simply mixing all the ingredients together. I recommend that you melt the butter first so everything blends smoothly. Once ready, set it aside.

  • Start filling the croissants. Slice the croissants lengthwise, spread the almond filling inside, and then close them up.

  • Lay them in a baking dish or casserole pan.
  • For the final touch, brush them with rosemary simple syrup (or regular simple syrup) and sprinkle with sliced almonds.

  • Bake for 20-30 minutes, but keep an eye on them. You aim for a golden colour, not dried, burnt croissants. Once out of the oven, give them 15-20 minutes to cool.

  • Finish with some dusted powdered sugar. And just like that you’ve made the most delicious almond croissants! Enjoy!

Can I only use old croissants?

Not really. While day-old croissants soak up all that delicious almond filling, you can totally use fresh croissants if that’s what you have. Sometimes it is with patience that we don’t have to wait for the croissants to get a bit old… I know – no judgement! I get it!

How to store the croissants

If you have any leftovers (which is rare because they’re so good), the best way to store them is wrapped in a paper bag. This helps keep the croissants from getting too soft or soggy while still allowing some airflow.
