Fresh Ingredients
Water – You need 2 cups of room temperature water to prepare the syrup.
Fine white sugar – I usually avoid white sugar in my cooking, but it’s essential for this recipe. I tried using honey, maple, and agave syrup, but they changed the flavor too much. Don’t worry, though—you’ll only be using a little bit of this syrup in your drinks, so it’s all good.
Pinch of salt – Always balance the sweetness with a pinch of salt, it does miracles.
Fresh rosemary – Wash the rosemary and keep the leaves on the steam. I grow my own rosemary in the garden, and it brings me so much pride and joy. Crush it a bit to release those flavours.
Lemon peel – Just a slice for extra flavour.
Rosemary Cocktail Syrup

2 cups of water, room temperature
3/4 cup fine white sugar
2-3 fresh rosemary steams, including the leaves
pinch of salt
1 slice of lemon peel
Directions
- In a small saucepan over medium heat, mix the water and sugar until fully dissolved. Add a pinch of salt and stir.
- Add the crushed rosemary leaves to the mixture and cook on low-medium heat for 30 minutes to let the flavors infuse nicely.
- Add the slice of lemon peel for extra flavour.
- After 30 minutes of cooking, you'll notice the syrup has a nice green color. Let it cool before storing it in a jar or a small glass bottle. Keep it refrigerated until used.
- Enjoy your rosemary cocktail syrup in your favorite drinks.
Notes
- I recommend you add a lemon peel and fresh rosemary in the jar where your syrup is stored for better results. Also, it looks beautiful when displayed (as a bonus).
