Why Are The No Bake Protein Balls Amazing
First, they are healthy protein snacks that help with any sweet cravings you may have, because they are rich and satisfying from the very first bite. They are high in protein, naturally sweetened, and balanced in a way that makes them perfect for grab-and-go mornings or afternoon slumps. I often make them for my family, because dessert somehow becomes very important in our house after dinner. So, having these protein bites ready, means we can enjoy something sweet without overdoing it (or feel guilty afterwards).
Another reason why I love these no-bake protein balls with coconut and matcha is because they are so flexible. If you dip them in melted chocolate, they feel like little truffles and instantly become more exciting, especially for kids. Usually, if I make them for kids, I simply use a little less matcha or skip it completely, since the coconut already gives them a soft, sweet flavour that most kids enjoy.
Why I Love Matcha
Matcha is a finely ground Japanese green tea powder that is naturally rich in antioxidants. It has this gentle, steady energy boost that feels smoother than coffee. Instead of that quick spike and crash, matcha supports more balanced energy, which is one reason I keep finding ways to use it in drinks, desserts, and now these matcha protein balls. It has a slightly earthy flavour that pairs so well with the coconut and honey.
Plus it gives these no-bake protein balls their beautiful soft green colour.
Just a heads up that if you are using it for drinks, you should go for a higher-quality matcha, for the best results (like ceremonial matcha).
For baking, you can go for medium quality and save that fancy stuff for your morning latte.
What You’ll Need for These Healthy No Bake Protein Balls
Shredded coconut – I love the coconut as a base here, because it adds texture and natural sweetness. I use the unsweetened shredded coconut to lower the amount of sugar.
Matcha powder – I like adding matcha for the most amazing flavour and nutrients. It is one of those things you once try, you get hooked on it for life.
Honey – A drizzle of honey helps bind everything together and get the perfect sweetness of the protein bites. This is where you can adjust to your own liking.
Vanilla protein powder – Using protein powder boosts the protein content. I use vanilla flavoured as I love the aroma. However, you can use whatever white protein you have.
Whipping cream or milk – A splash will help create a smooth dough. Also, if the dough is too dense and dry, you can splash a bit more and easily adjust.
Coconut flour – The coconut flour helps firm the mixture. I love using coconut flour so all the flavours lean to the coconut side of things.
Chocolate and coconut oil – A simple glaze makes the protein balls feel like dessert. I add coconut oil for smooth glaze.
Blender or food processor – It makes mixing of all ingredients faster and less messy. I love both my blender and food processor as my favourite kitchen tools.
Now that you know what you need – let’s learn how to make protein balls, the easy way.

½ cup shredded coconut
2 teaspoons matcha powder
1 to 2 tablespoons honey
3 tablespoons vanilla protein powder
3 tablespoons whipping cream or milk
½ cup coconut flour
- For glaze
½ cup chocolate chips
1 tablespoon coconut oil
How to Make Matcha Protein Balls
- Add the shredded coconut and coconut flour into a blender or food processor.
- Next, add the vanilla protein powder. I like starting with dry ingredients first for easier mixing.
- Sprinkle in the matcha powder.
- Drizzle the honey over the mixture, and pour in the cream or milk.
- Pour the whipping cream (or milk), next.
- Pulse for about 20 seconds until everything comes together into a soft dough. If it feels too dry, add a small splash of milk, and if it feels too sticky, add a little more coconut flour. Very easy to adjust.
- Lightly wet your hands, scoop about one tablespoon of dough, and roll into balls. Place them in the refrigerator for at least thirty minutes so they can firm up properly.
- To prepare the glaze, melt chocolate chips with coconut oil in the microwave for about 30-40 seconds, stirring until smooth. Allow the chocolate to cool slightly before rolling each chilled protein ball in the glaze.
- Place them on parchment paper and let the chocolate set completely.
- To finish, you can sprinkle a little extra matcha on top for decoration, they will look amazing.
Notes
- If you have a baking rack, you can transfer the glazed protein balls there until the melted chocolate settles. If not, adding them on a parchment or wax paper will help,
Make Vegan Matcha Protein Balls
To make these matcha protein balls vegan, simply use plant-based milk and vegan chocolate. The texture and flavour will still be just as amazing, and they remain one of the easiest healthy protein snacks to prepare in advance.
Any Leftovers?
Store any leftovers of no bake protein balls in an airtight container in the refrigerator for up to 5 days. When you are ready to serve them, keep them at a room temperature for a few minutes so they soften slightly and the texture becomes perfectly tender again.
