I am obsessed with filling croissants – they are such a smart way to use up stale leftovers. Never, ever throw them out! Just stuff them with a flavourful quick pumpkin spice filling and you’ll get a perfect instant morning treat, brunch, or a picnic snack.

If you’re feeling ambitious, go ahead and bake your own croissants from scratch. But honestly? I usually grab a store-bought batch and save my energy for the fun part — the filling.

Even though they look fancy (and smell like heaven), they’re surprisingly simple to make. These crispy pumpkin-filled croissants come together in no time, and they make your kitchen smell like your favourite coffee shop.

What You’ll Need For This Recipe

Here is what makes these pumpkin spice croissants so good:

Croissants – Day-old croissants are perfect, because they soak up all that delicious filling.

Pumpkin puree – You can use canned or homemade pumpkin puree, either works. Most of the time I use canned, because I never have leftovers of homemade roasted pumpkin (I eat it all!).

Almond meal – Adds nutty flavour and keeps the filling from being overly sweet.

Egg – For silky, custard-like texture.

Brown sugar – Just enough sweetness to balance the spices.

Pumpkin spice mix – I mix cinnamon, nutmeg, and all spice for perfect pumpkin spice flavour.

Butter – Because, butter makes everything taste better and smooth. Keep it at room temperature so it can be whipped well.

All-purpose flour – Helps the filling set beautifully into perfect texture.

Maple syrup and sliced almonds – For golden, crispy, glossy topping. Plus it makes croissants look so pretty.

Great idea! I have the perfect recipe to share – meet my maple glazed roasted pumpkin. It it is very easy to make, delicious and irresistible. Plus you can steer clear of all those preservatives and have few pieces of caramelized pumpkin to spare for later.  

I typically go for butternut squash because it is what I’ve known and loved since I was little. It roasts beautifully, but you can use any variety you like. The process is very simple: just carve out the pumpkin and remove the seeds. Make sure you don’t toss them away because they are packed with tons of nutrients. You can clean and roast them separately for a delicious and fun snack, but for now, let’s focus on roasting the pumpkin itself.

Make these easy and pumpkin spice croissants with a creamy pumpkin filling wrapped in flaky, buttery croissant. A perfect fall breakfast or brunch treat, and a smart way to use leftover croissants.

Ingredients

  • 4 large croissants 

  • ½ cup butter 

  • 3 tablespoons brown sugar 

  • 1 egg  

  • ½ cup pumpkin puree, canned 

  • ½ cup almond meal 

  • ½ cup flour 

  • 1 teaspoon cinnamon 

  • ½ teaspoon all spice 

  • ½ teaspoon ground nutmeg 

  • Pinch of salt

  • Toppings
  • 1 tablespoon maple syrup 

  • 1-2 tablespoons sliced almonds 

Directions

  • Preheat the oven to 350°F (175°C).
  • Slice each croissant length-wise, not all the way through, just enough to open them up.
  • Mix the dry ingredients: almond meal, flour, and spices, in a bowl.mix dry ingredients
  • Whisk the softened butter until creamy, then add sugar gradually and whisk until all incorporate nicely.whisk butter
  • Add the egg next and whisk well.add egg
  • Stir in the pumpkin purée until smooth. If the mixture feels too runny, add a bit more almond meal.pumpkin filling
  • Spread 2–3 tablespoons of filling into each croissant and close gently.fill the croissants

How to Store Leftovers

These pumpkin spice croissants are best fresh and warm. But if you have leftovers, here is the trick:

  • Put the cooled croissants in a paper bag and keep them at room temperature for up to one day. A paper bag helps keep the outside a little crisp while letting the inside remain soft.
  • Warm them for few seconds in the microwave (10–15 seconds) before served.
