It is interesting how the story for the Kalhúa Chocolate Truffles with dates has actually started. This year, I’ve set a Christmas cookie challenge for myself, to make at least five different types of Christmas treats to share with dear friends. The second on my list of to-do Christmas treats are these absolutely delicious, so easy, rich chocolate truffles with a twist. And what’s the twist?

The main twist for these no-bake truffles comes from two main ingredients: the natural sweetness of the dates and the delicious touch of the Kahlúa liqueur. Oh, these two together work wonders! So follow along this recipe to learn how fun and simple it is.

How is this Recipe for Kalhúa Chocolate Truffles with Dates so Flexible

The best part of these truffles is how versatile and flexible they are. You can easily swap out ingredients to create different flavours, making them perfect for experimenting (in a good way). If you are not the greatest fan of Kahlúa, you can easily add a splash of Baileys instead. For an alcohol-free option you can add pure vanilla extract or maple syrup. Yes, it is that easy!

For toppings, you can roll the truffles in crushed pistachios or walnuts instead, just make sure nuts are a safe option for who they will be served to. I told you, the options for both flavour variations and toppings are endless.

What Do You Need for This Recipe

Chocolate: You have some flexibility here, so choose what you usually get. The creamy texture of the milk chocolate will give you a sweet, creamy flavour, while dark chocolate is great for an intense, rich bitter touch. A mix of both types works well too if it is hard to decide. This time, I used milk chocolate for that extra creamy flavour.

Heavy cream – Full fat, heavy cream works the best to get that smooth, luscious texture we are aiming for. If you have any dietary restrictions, make sure you download my Last-Minute substitute list to find the perfect swap. For dairy-free options, you can easily switch to coconut cream instead.

Kahlúa liqueur – I love the coffee-based flavour of the Kahlúa that pairs so beautifully with the chocolate. Another great option is the old good Baileys. 

Dates – They add natural sweetness and nice chewy texture. Make sure you use pitted dates and chop them finely.

Coconut flakes – Perfect for rolling and decorating the truffles, giving them a beautiful snowflake-like look. If you want, you can substitute the shredded coconut with some crushed nuts or chocolate flakes. 

Unsalted butter – The butter helps the truffles firm up once chilled and roll nicely.

Biscuits – Use your favourite tea cookies as the base for the truffles. This time I went with ginger-cinnamon-flavoured biscuits because I love the spicy touch of the ginger and cinnamon in the combination with the chocolate and Kahlua. Make sure you crush or finely chop them in a food processor and adjust the quantity to achieve a firm mixture that is easy to roll.

Easy recipe for no-bake chocolate truffles, with Kahlúa and sweet dates. Follow my simple steps to roll these tasty treats.

Ingredients

  • 150 grams milk chocolate

  • ¾ cup heavy cream 

  • 1 shot (40 ml) Kahlúa liqueur

  • 2 tablespoons butter, room temperature

  • 8-10 pitted dates, chopped

  • 1/2 cup of shredded coconut for coating

Directions

  • The process is very simple - start with chopping the dates in a food processor.

  • In a small saucepan over medium-low heat melt the chocolate with the butter. Add the dates and Kahlúa and stir well.

  • Pour the heavy cream and continue cooking until everything is well incorporated and thickens up a bit more.

  • Now, add in the crushed biscuits and stir well with a spatula. You need to get a bit more thicker texture, but not overly dry as the truffles will break. You may need to adjust the quantity depending on the dryness of the cookies you decide to use. Cover the bowl with plastic wrap and refrigerate for at least 2-3 hours or until the mixture is firm enough to shape.

  • Roll the truffles in coconut flakes (or your choice of coating). Place them on a tray lined with parchment paper.

  • Refrigerate the truffles for another hour to set. Store them in an airtight container in the fridge until ready to serve.

Notes

  • If while rolling the truffles the mixture becomes too sticky, lightly wet your hands with water and keep rolling.

How to Easily Roll the Truffles

Scoop a portion of the mixture out (I like using ice cream scoop for equal sizing) and roll it into a ball between your hands. Make sure you work quickly, as the heat from your hands easily melts the butter and chocolate. If the mixture becomes too sticky, lightly wet your hands with water and keep rolling.

How to Store the Kahlúa Chocolate Truffles

Storing is very simple. Keep the truffles in the fridge for up to a week, or freeze them in an airtight container for up to a month. I love these truffles as they are perfect for unexpected guests. Simply take them out of the freezer about an hour before serving, and you’re all set! So easy!
